Creamy Turmeric Lentil Soup

You’ll need:

  • A tablespoon of olive oil
  • A medium diced yellow onion
  • Three peeled and diced carrots
  • Three diced stalks of celery
  • Four cloves of garlic
  • Two teaspoons of turmeric
  • Two teaspoons of cumin
  • One teaspoon of smoked paprika
  • A bit of red pepper flakes
  • A cup of lentils
  • Four cups of broth (it’s best to use homemade vegetable broth but you can also use fish or chicken broth for different flavors)
  • Two cups kale or spinach
  • A can of coconut cream


In a large pot heat the oil. Put the onion and saute for about 3 minutes and then add carrots. After a while put the spices and garlic a and cook for a minute. Put the broth and lentils. Boil them and then reduce the heat, cooking it uncovered for about half an hour or until the lentils become soft. Add the coconut cream and kale and stir well.
